The following Covid-19 temporary discretion has been agreed until further notice.
The practical observation may be replaced by evidence from Training Provider, assessed through a Q&A with an external assessor.
The current discretion continues. The use of a witness testimony covering an observation was felt to be efficient, keeping the burden on the employers manageable. Allowing the external assessor to undertake the question-and-answer session will ensure independence and verify and check the apprentice’s coverage of the KSBs.
The competency framework document will support the evidence gathered and will be signed off by the employer, moving away from the time-bound evidence which cannot be achieved due to COVID-19 restrictions in the industry
Managing a team to produce standardised dished and menus within a kitchen environment.
Senior production chefs may lead a brigade team or may support the head chef in larger establishments. They report activities to the Head chef or appropriate line manager. They supervise production chef teams in a variety of kitchen environments, for example; schools, hospitals, the Armed Forces, care homes and high street casual dining or pub kitchens. Job roles include Head chef, Second Chef, Kitchen Manager / Supervisor, Cook. Senior production chefs have accountability for the day-to-day running of the kitchen service, producing, monitoring and maintaining consistent food standards, legislative requirements and quality across all areas and during all stages of production and supply.
Senior production chefs:
|Entry||Entry requirements to be set by employers, but previous achievement of level 2 production chef or a minimum of 12 months relevant industry experience.|
|Duration||The duration of this apprenticeship is a minimum of 12 months|
|English and maths||Apprentices without level 2 English and maths will need to achieve this level prior to taking the end-point assessment. For those with an education, health and care plan or a legacy statement the apprenticeships English and maths minimum requirement is Entry Level 3 and British Sign Language qualifications are an alternative to English qualifications for whom this is their primary language.|
